This is comfort food – Italian style

IMG_3372An Italian twist on good old stew and dumplings – quick and cheap to make plus it tastes absolutely delicious, a great mid-week treat for all the family or just for two greedy people!

This dish is made from ready-made gnocchi which can be found in the chiller cabinet with all the other fresh pastas. The sauce is made by frying bacon and then adding both tinned and halved cherry tomatoes and a splash of cream (you could also use yoghurt). The cooked gnocchi is mixed into this and then baked under a blanket of fresh, creamy fior di latte. Perfect, easy comfort food ready in a flash.
